Description

Ingredients

1 tbsp olive oil

1 onion, chopped

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, chopped

1 zucchini, chopped

1 red bell pepper, chopped

1 can (15 oz) diced tomatoes

1 can (15 oz) chickpeas, drained and rinsed

1 can (15 oz) white beans, drained and rinsed

2 cups vegetable broth

1 tsp dried oregano

1/2 tsp dried thyme

1/2 tsp paprika

Salt and black pepper to taste

2 cups fresh spinach

Juice of 1 lemon

Fresh parsley for garnish (optional)


Instructions

In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant.

Transfer to a slow cooker and add carrots, celery, zucchini, bell pepper, diced tomatoes, chickpeas, white beans, vegetable broth, oregano, thyme, paprika, salt, and pepper.

Stir to combine and cover.

Cook on low for 6-7 hours or on high for 3-4 hours until vegetables are tender.

Stir in spinach and lemon juice during the last 10 minutes of cooking.

Serve hot, garnished with fresh parsley if desired.
