Description

Ingredients

1 pound sirloin steak (or your favorite cut), cut into bite-sized cubes

3 medium russet potatoes, peeled and diced

4 tablespoons unsalted butter

2 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon dried Italian herbs (or parsley), plus extra for garnish

1 teaspoon smoked paprika (optional)

Salt and black pepper, to taste


Instructions

Cook the Potatoes: Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the diced potatoes and season with salt, pepper, and smoked paprika. Cook, stirring every few minutes, until the potatoes are golden and crispy outside and soft in the center, about 12 to 15 minutes. Transfer the potatoes to a plate and set aside.

Sear the Steak: Add the remaining olive oil to the skillet. Season the steak cubes with salt and black pepper, then place them in the skillet in a single layer. Sear the steak on all sides until browned and cooked to your preferred doneness, about 2 to 4 minutes per side for medium-rare. If needed, cook in batches so you do not overcrowd the pan.

Add Garlic Butter and Combine: Lower the heat to medium. Return the cooked potatoes to the skillet. Add the remaining butter and all the minced garlic. Stir everything together gently, letting the butter melt and the garlic become fragrant, coating both the steak and potatoes, about 1 to 2 minutes. Sprinkle with Italian herbs or fresh parsley.

Serve: Serve hot, garnished with extra parsley if desired.
