Description

Stuffed Pepper Orzo Skillet is a comforting one-pan dinner featuring seasoned ground beef, tender orzo pasta, colorful bell peppers, onion, marinara sauce, diced tomatoes, and melted cheddar cheese for a hearty, flavorful meal that’s perfect for busy weeknights.


Ingredients

Main Ingredients:

• 1 lb ground beef

• 1 cup orzo pasta (cooked according to package directions)

Vegetables:

• 1 cup diced yellow onion

• 3 bell peppers, chopped

Sauce Base:

• 24 oz marinara sauce

• 14 oz petite diced tomatoes (with juice)

• ½ cup chicken broth (optional, for a thinner consistency)

Cheese:

• 1 cup shredded cheddar cheese

Seasonings:

• 1 tsp olive oil

• 1 tsp chicken bouillon powder

• 1 tsp garlic powder

• 1 tsp onion powder

• Salt and black pepper, to taste


Instructions

1. Cook the orzo
Prepare the orzo according to the package instructions. Drain and set aside.
2. Sauté the vegetables
Heat olive oil in a large skillet over medium-high heat. Add the diced onion and bell peppers, cooking for about 4–5 minutes until slightly softened.
3. Brown the beef
Add the ground beef to the skillet. Cook until fully browned, breaking it up as it cooks. Drain any excess grease.
4. Build the sauce
Stir in marinara sauce, diced tomatoes (with juices), chicken bouillon, garlic powder, onion powder, salt, and pepper. Mix well and let it simmer for a few minutes.
5. Combine everything
Add the cooked orzo to the skillet and stir until evenly coated in the sauce.
6. Add cheese & finish
Sprinkle in the shredded cheddar cheese and stir until melted and creamy.
7. Serve
Remove from heat and serve warm.
