Ingredients
1 pound ground beef
• 2 packets taco seasoning (2 ounces total)
• 6 ounces Velveeta cheese, cubed
• 10 ounces Rotel tomatoes with green chilies, undrained
• 2 ounces canned green chilies
• 1/2 cup black beans, rinsed and drained
• 1/2 cup corn
• 1/4 cup red onion, diced
• Optional toppings: sour cream, salsa, fresh cilantro
Instructions
Cook the Ground BeefIn a large skillet over medium-high heat, brown the ground beef until it is fully cooked. Drain any excess grease from the skillet. Stir in the taco seasoning and prepare it according to the package directions.
Melt the CheeseReduce the heat to low. Add the cubed Velveeta cheese to the beef mixture. Stir continuously until the cheese is completely melted and the mixture is smooth.
