Ingredients
16 oz cream cheese, room temperature – Use full-fat for the creamiest, richest texture
1/2 cup mayonnaise – Adds tang and helps spread the cream cheese smoothly
1/2 teaspoon garlic powder – Fresh is great, but powder melts evenly into the mix
1/2 teaspoon onion powder – For a subtle, savory depth without overpowering
1/2 teaspoon salt – Essential for balancing the jalapeños and peppers
1/3 cup tamed jalapeños, drained and finely chopped – Tamed means pickled; they add brightness without overwhelming heat
1/3 cup roasted red peppers, drained and finely chopped – For smokiness and festive color
1 cup shredded white cheddar cheese – Sharp and melty; avoid pre-shredded for better sauce-like integration
Instructions
Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish or similar-sized oven-safe casserole.
In a large mixing bowl, beat the room-temperature cream cheese with a hand mixer or stand mixer until smooth. Add the mayonnaise and beat until fully incorporated—about 1–2 minutes.
Stir in garlic powder, onion powder, and salt. Mix well to distribute evenly. Don’t skip the salt—it elevates all the flavors without making it salty.
Gently fold in the drained and chopped tamed jalapeños and roasted red peppers. Use a spatula to avoid deflating the mixture.
Gradually stir in the shredded white cheddar cheese, reserving 1/4 cup for the top. This creates that irresistible golden crust.
Transfer the mixture to your prepared baking dish. Spread it evenly with a spatula. Sprinkle the reserved cheese on top for extra browning.
Bake for 20–25 minutes, or until the dip is bubbly at the edges and the cheese on top is lightly golden.
Let rest for 5–10 minutes after baking. This helps the dip set slightly and prevents spills when serving.
