Ingredients
1 pound chicken breast, cubed
4 cups chicken broth
1 can (13.5 oz) coconut milk
2 tablespoons red curry paste
1 tablespoon fish sauce
1 tablespoon lime juice
1 teaspoon ginger, grated
1 teaspoon garlic, minced
1/2 cup mushrooms, sliced
1/4 cup cilantro, chopped
2 green onions, sliced
1 red bell pepper, thinly sliced
Instructions
In a large pot, combine chicken broth, coconut milk, red curry paste, fish sauce, lime juice, ginger, and garlic. Bring to a simmer.
Add chicken and mushrooms. Cook until chicken is cooked through, about 5-7 minutes.
Stir in red bell pepper. Cook for 2 minutes.
Garnish with cilantro and green onions before serving.
