Ingredients
2 tablespoons olive oil
1 pound protein of choice (chicken, tofu, or plant-based)
1 medium onion, diced
1 bell pepper, chopped
3 cloves garlic, minced
1 cup uncooked rice or grain of choice
2 cups broth (vegetable or chicken)
1 teaspoon seasoning blend (your favorite mix)
Salt and pepper, to taste
Fresh herbs for garnish (optional)
Instructions
Sauté the Base: In a large skillet over medium heat, warm the olive oil. Add protein and cook until browned. Remove and set aside.
Cook Aromatics: In the same pan, sauté onion and bell pepper until soft, about 4 minutes. Stir in garlic and cook for another 30 seconds.
Toast the Rice: Add rice to the skillet and stir for 1-2 minutes to toast lightly and absorb the flavor.
Combine and Simmer: Return protein to the pan. Add broth, seasonings, salt, and pepper. Stir to combine, bring to a simmer, cover, and cook for 20 minutes.
Finish: Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork and top with fresh herbs before serving.
