2 tablespoons olive oil or butter
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
2 cups cooked turkey, shredded (use white or dark meat)
1 cup long-grain white rice (or brown rice for extra fiber)
8 cups chicken or turkey broth
1 bay leaf
1 teaspoon dried thyme (or 2 teaspoons fresh)
Salt and black pepper to taste
2 tablespoons fresh parsley, chopped (for garnish)
Optional: squeeze of lemon juice before serving
Instructions
Sauté the Vegetables: In a large soup pot, heat olive oil or butter over medium heat. Add onion, carrots, and celery, cooking for 5–6 minutes until softened. Stir in garlic and cook for 1 minute more.
