Description

Valentine Day Red Velvet Cookies are soft, chewy cookies made with red velvet cake mix, eggs, vegetable oil, and vanilla, then dipped in creamy white chocolate and finished with festive Valentine sprinkles for a sweet, romantic treat.


Ingredients

1 (15 oz.) box red velvet cake mix

⅓ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

11 ounces white chocolate chips or melting wafers

Valentine’s sprinkles


Instructions

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper

In a large bowl, combine cake mix, vegetable oil, eggs and vanilla extract

Mix until fully combined (dough will be thick)

Scoop 1.5-tablespoon portions and roll into balls

Place dough balls 2″ apart on prepared baking sheets

Bake for 8-10 minutes until edges are set

Cool on baking sheets for 5 minutes before transferring to wire rack

Melt white chocolate in microwave-safe bowl in 30-second intervals, stirring between each

Dip cooled cookies halfway into melted chocolate

Immediately decorate with sprinkles

Let chocolate set completely before serving
