Ingredients

For the Banana Bread Syrup:

  • 1 overripe banana, mashed
  • ¼ cup pure maple syrup
  • ¾ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine grain salt
  • 1 cup water

For the Latte:

  • ½ cup whole milk
  • 2 shots espresso (or ½ cup strong brewed coffee)
  • 12 tablespoons banana bread syrup (to taste)
  • 1 cup ice (for iced latte)

For the Cold Foam (Optional):

  • 3 tablespoons whole milk
  • 2 tablespoons heavy cream
  • 1 tablespoon banana bread syrup

For the Caramelized Banana Topping (Optional):

  • ¼ banana, diced
  • ½ tablespoon butter
  • 2 tablespoons maple syrup

Instructions

Step 1: Make the Banana Bread Syrup

  1. Mash the Banana:
In a small saucepan, mash 1 overripe banana until smooth.
  2. Add Sweeteners and Spices:
Stir in ¾ cup light brown sugar, ¼ cup pure maple syrup, and 1 teaspoon ground cinnamon.
  3. Cook the Mixture:
Place the saucepan over medium heat. Cook for about 5 minutes, stirring occasionally, until the sugar dissolves and the mixture becomes fragrant.
  4. Add Water:
Pour in 1 cup water and bring the mixture to a gentle boil.
  5. Simmer:
Reduce the heat and let it simmer for 10–20 minutes, stirring occasionally, until the syrup thickens slightly.
  6. Finish the Syrup:
Remove from heat. Stir in 1 teaspoon vanilla extract and ½ teaspoon fine grain salt.
  7. Strain:
Pour the syrup through a fine mesh sieve or cheesecloth into a jar or bottle, discarding any solids. Let cool before using.

Step 2: Caramelize Bananas (Optional)

  1. Melt Butter:
In a small skillet over medium heat, melt ½ tablespoon butter.
  2. Add Banana and Maple Syrup:
Add ¼ banana (diced) and 2 tablespoons maple syrup.
  3. Caramelize:
Cook, stirring gently, until the banana pieces are golden and sticky, about 3–5 minutes. Set aside for topping.

Step 3: Make Cold Foam (Optional)

  1. Combine Ingredients:
In a small cup, mix 3 tablespoons whole milk, 2 tablespoons heavy cream, and 1 tablespoon banana bread syrup.
  2. Froth:
Use a milk frother, handheld whisk, or jar with a tight lid to froth the mixture until thick and fluffy.

Step 4: Assemble the Latte

For Iced Banana Bread Latte:

  1. Fill a glass with 1 cup ice.
  2. Add ½ cup whole milk and 1–2 tablespoons banana bread syrup (to taste).
  3. Pour in 2 shots of espresso (or ½ cup strong brewed coffee).
  4. Stir well to combine.
  5. Top with cold foam and caramelized bananas, if desired.

For Hot Banana Bread Latte:

  1. Skip the ice.
  2. Steam or heat ½ cup whole milk until hot and frothy.
  3. Add 1–2 tablespoons banana bread syrup to your mug.
  4. Pour in the steamed milk, then add 2 shots of espresso.
  5. Stir gently and top with cold foam and caramelized bananas, if you like.

Notes

Adjust the amount of banana bread syrup to suit your sweetness preference. For a fun twist, try adding a sprinkle of cinnamon or a drizzle of maple syrup on top!
