Description
One Pot Chicken and Sausage Jambalaya is a hearty Cajun-inspired dish made with tender chicken, smoky sausage, rice, tomatoes, bell peppers, onions, and bold spices, all cooked together in one pot for a rich, flavorful, and easy meal.
Ingredients
1 pound Cajun Sausage, sliced
1 large boneless skinless chicken breast, diced
1 tablespoon olive oil
3 ½ cups chicken broth
2 cups rice
3 tablespoons tomato paste
2 teaspoons minced garlic
14 ounces petite diced tomatoes, undrained
1 cup yellow onion, diced
2 celery ribs, diced
1 bell pepper, diced
1 ½ teaspoons Cajun seasoning
1 teaspoon chicken bouillon powder
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and pepper to taste
1 cup shredded cheddar cheese, for serving
Instructions
Heat a large skillet over medium high heat. Add the sausage and cook for 5–6 minutes until browned. Remove and set aside.
Add the chicken to the same skillet and cook for 7–9 minutes until fully cooked through. Remove and set aside with the sausage.
Add the celery, onions, and bell peppers to the skillet. Sauté for 7–8 minutes. Stir in the minced garlic and cook for 1 more minute.
Add the tomato paste and rice, stirring until combined. Pour in the chicken broth and diced tomatoes, then add the Cajun seasoning, chicken bouillon powder, onion powder, garlic powder, salt, and pepper. Return the cooked sausage and chicken to the skillet. Stir everything together and bring to a simmer.
Reduce heat to low, cover, and cook for 15–20 minutes, stirring occasionally to prevent sticking. Once the rice is fully cooked, remove from heat. Serve hot, topped with shredded cheddar cheese.
