Ingredients
• 1 lb chicken breast, thinly sliced
• ½ onion, sliced
• 1 red bell pepper, sliced
• 1 orange bell pepper, sliced
• 1 green bell pepper, sliced
• ½ yellow bell pepper, sliced
• 2–3 tbsp olive oil
• Seasonings of choice (common options: garlic powder, onion powder, paprika, black pepper, seasoned salt)
• 1 tbsp minced garlic
• 2 tbsp cornstarch
• 2 cups chicken broth
• Dash of browning sauce
• Cooked rice, for serving
Instructions
1. Slice the onion and bell peppers; set aside.
2. Thinly slice the chicken breast and season generously with your preferred spices.
3. Heat olive oil in a skillet and cook the chicken for 8–9 minutes, until lightly browned. Remove and set aside.
4. In the same skillet, add the sliced onions and peppers. Sauté for about 5 minutes.
5. Add the minced garlic and cook for 1 more minute.
6. Sprinkle in the cornstarch and stir to coat the vegetables.
7. Pour in the chicken broth and return the cooked chicken to the skillet.
8. Add a small dash of browning sauce and let the mixture simmer until the gravy thickens.
9. Serve the pepper chicken over rice.
