Ingredients
• 4 boneless, skinless chicken breasts
• 2 tablespoons olive oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper, to taste
• 1 tablespoon unsalted butter
• 3 cloves garlic, minced• 1 cup heavy cream
• ½ cup chicken broth
• ½ cup sun-dried tomatoes, chopped
• ⅓ cup grated Parmesan cheese
• ½ teaspoon red pepper flakes (optional, for heat)
• 1 teaspoon Italian seasoning
• 8 ounces fettuccine, bow-tie (farfalle), or spaghetti, cooked according to package instructions
• Fresh basil, chopped, for garnish
Instructions
Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Add the chicken and sear for 4 to 5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
Stir in the heavy cream and chicken broth, and let it simmer for 2 to 3 minutes.
Add the chopped sun-dried tomatoes, grated Parmesan cheese, red pepper flakes if using, and Italian seasoning. Stir well and let it simmer for another 3 to 4 minutes until the sauce has slightly thickened.
Return the cooked chicken to the skillet and coat it with the sauce. Let everything simmer together for another 5 minutes so the flavors meld.
Toss the cooked pasta directly into the skillet to coat it with the sauce, or plate the pasta separately and spoon the sauce and chicken over the top.
Garnish with fresh chopped basil and extra Parmesan cheese if desired.
